Baked Egg Muffins


Don't you love breakfast? I love breakfasts that don't require a whole lot of energy/effort on my part, personally, because until I have some coffee pulsing in my veins, I don't do much.

These Baked Eggs Muffins are just the ticket. Plus, every single one can be different! This means the carnivores and the herbivores can come together and have a satisfying breakfast together! Not to mention the picky eaters, and the adventurous types.


Baked Egg Muffins

The Base:
6-12 eggs, depending on how many people you are serving. 
( 1-2 eggs per person, per cup)

The Mixins:
shredded cheese
chopped onions
chopped peppers
chopped mushrooms
cooked bacon bits
cooked sausage
hotsauce
etc. etc. etc.... whatever you like on your eggs!

Preheat oven to 350*- lightly grease a cupcake pan.
If you have a Large cupcake pan, you can crack two eggs in each cup, but otherwise do one egg per cup.
Fill the rest of the cup with your mixins and then take a fork and beat together lightly.
Bake for about 15 minutes, let cool and serve!
