Have you jumped on the Chia Seed Pudding bandwagon yet?
I had this bag in my pantry for longer than I care to admit before I finally dug it out to try making some myself. I don't know why I didn't try it much, much sooner- it could not be easier and it is ssoooooo delicious!
If chia seeds are not a part of your diet right now, they definitely should be! According to Healthline.com, these teeny tiny seeds pack a major punch! Antioxidants, high fiber, and quality protein are at the top of my list.
But, is it really a pudding?
As the little seeds absorb the liquid they become kind of gel-like and the texture becomes similar to a pudding. Think of them as a thickener. It will still be a bit seedy, of course, no getting around that, but it's smooth enough that even my 4-year-old loves it!
Coconut Blueberry Chia Seed Pudding
Serves 1
3 Tbs Chia Seeds
3/4 cup milk of choice (I prefer coconut milk)
1 Tbs honey or agave (optional, I leave it out most days)
Splash of vanilla extract or coconut extract
Toasted Coconut Flakes
Mix all ingredients together and let stand for at least 15 minutes.
After 15 minutes stir again, top with fresh blueberries and devour!
Told ya! So easy.
