Pineapple Avocado Salsa

Happy Summer!

School's out, the pools are full, and the grills are hot. Who doesn't love this time of year? Okay, so the heat here in Longhorn Land can get a bit stifling, but as long as you find a nice shady spot and keep some cool, tasty treats by your side you'll be fine!

This summer I am lucky enough to travel to beautiful Savannah, Georgia to attend the FitBloggin14. I am so excited for this because it's my first real-life convention, I'll be surrounded all weekend by fitness minded folks like myself, AND the California Avocado Commission is one of the sponsors!



 The pineapple and mint are a cool contrast to the spicy jalapeno, while the avocado soothes and smooths, binding all the flavors into a creamy-cool summer-time salsa. This cool and tasty recipe will be entered into the “California Avocado Cutting-Edge Culinary Recipe Contest”.

Pineapple Avocado Salsa
yields aprx 2 cups salsa

2/3 cup fresh pineapple diced
2 tsp lime juice
3 mint leaves, chopped
1 small jalapeno- seeded and diced (use 1 /2 jalapeno if you can't take the heat)
1 California Avocado
Corn Chips for serving

Combine pineapple, lime juice, mint leaves, and jalapeno in a small bowl. Refrigerate for 20-30 minutes for best flavor. Before serving, fold in diced California Avocado. Serve with corn chips.
