Pom-Cran Baked Oatmeal w/Almonds- from BetterOats

The wonderful people over at BetterOats sent me all of these tasty oatmeal's to try! Let me just tell you friends, these little packets are not your average oatmeal! They're tasty, not super sweet or over-flavored, and they each contain 100% whole grain oats and flax seeds. As you can see, BetterOats uses less packaging than traditional oatmeal packets, PLUS their pouch doubles as a measuring cup! Sweet!


I decided to use the Pomegranate flavor and make some delicious, nutritious baked oatmeal. I added dried cranberries and slivered almonds and it just felt like a Christmas morning breakfast.


Pom-Cran Baked Oatmeal w/Almonds
inspired by BetterOats Oatmeal

5 packets Pomegranate flavored BetterOats oatmeal
1/3 cup sliced almonds
1 tsp baking powder
1/2 cup dried cranberries
1 1/2 cups fat free milk
1/2 cup applesauce
2 tbs melted butter- cooled
1 large egg- beaten

Heat oven to 350*
Grease an 8x8 square pan.
In a large bowl combine alll dry ingredients and mix well, separating any cranberry clumps.
Mix all wet ingredients in a medium sized bowl- make sure the butter is cool so you don't scramble your egg!
Combine dry into wet- batter will be liquid-y.
Pour into 8x8 pan- bake for ~20-30 mins, let cool for 10 minutes before cutting and serving.

This would be a great dish to prepare the night before and then bake in the morning!
