Hot Cocoa Cookies- part deux

This will be my last sweet-treat post for awhile..... well, definitely for 2012. :-)

I am not going to post any of my Christmas presents because as the Grinch said: "Maybe Christmas doesn't come from a store, maybe Christmas perhaps means a little bit more". I had a great Christmas- I was lucky enough to spend it with two families. I had a lot of laughs, love, and good eats.

I wanted to re-post these Hot Cocoa Cookies because I've been working on re-vamping them. I used red and green chocolate chips and Kraft Jet Puffed Mallow Bits. They turned out delicious!




Hot Cocoa Cookies

1 stick + 2 tbs room temp butter
1/2 cup sugar
1/3 cup brown sugar
1/2 tsp vanilla ext
1 egg
1 1/2 cups + 2 tbs all purpose flour
2 packets hot cocoa mix
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup chocolate chips
1/2 cup Mallow Bits

In a medium bowl, cream together butter, sugars, egg, and vanilla. In a large bowl combine all dry ingredients and toss in chocolate chips. Add dry and wet ingredients mixing well. Batter will be thick, you may need to use clean, greased hands to fully combine. Fold in Mallow Bits.
Drop rounded spoonfuls onto a lined cookie sheet- Bake at 350* for 8-11 mins.
Depending on size, makes 12-24 cookies.
Cool on a cooling rack and enjoy!
