Apple Spice Muffins- a healthier treat


It's the eve of Halloween!

I really have no super exciting plans- I'm going to take Princess Wiener to my sister's house to give out candy with her and her hubby, but that's about it. Every year my school does a school-wide Monster Mash in the cafeteria before the bell rings for the day. It's SUPER cute.

While these muffins don't scream Halloween, they are a great fall treat. Plus since I replaced the oil with applesauce and they have real slices of apples hidden inside, they're a tad healthier than the average muffin.

Apple Spice Muffins
makes 18-24 muffins

1 box Spice cake mix
3 eggs
1/2 cup unsweetened applesauce
3/4 water
1/2 cup toffee bits (optional)
1 medium honeycrisp apple- sliced uber thin and chopped to 1/4" pieces.

Heat oven to 350*. Grease or line muffin tin(s).
Combine cake mix with eggs, applesauce, and water. Fold in the sliced/chopped apples and toffee bits. Scoop into muffin tins filling 3/4 full.
Bake for 18-21 minutes. Try to let them cool before you chow down.
