Taco Salad w/creamy jalapeno dressing

Okay, now that that's off my chest, let's talk FOOD, shall we?

Don't you just love a giant salad? I love salads with all kinds of stuff in them. If it's just lettuce and maybe a few carrots or tomatoes I'll pass, but something like this Taco Salad will fill you up without weighing you down! Do I sound like a commercial? I jut think a big bowl of lettuce is a great vehicle for all kinds of leftovers! That's kind of how this salad was born. There were tons of veggies in the fridge, taco seasoning in the pantry, and a pound of lean ground beef that was just begging to be cooked.


For the dressing, I used the Creamy Jalapeno Dip that gets put on everything. To be quite honest, in my salads if there are enough veggies and they are super fresh, I'll leave off any dressing and eat my salad naked.




Taco Salad w/creamy jalapeno dressing

1lb of lean ground beef
taco seasoning packet + water
2 medium red bell peppers
3/4 small white onion
1-2 cups corn (I used frozen)
cilantro
your choice of lettuce blend- I used Spring Mix

Toppings:
Shredded cheese
corn tortilla chips
jalapeno dressing

While the meat is browning in a skillet, chop bell peppers, onion and cilantro and defrost corn. Make sure your lettuce is washed and torn into bite sized pieces. When the meat is browned, sprinkle the taco seasoning on and stir in water (per directions on packet).  Toss together all veggies, top with taco meat, cheese, and jalapeno dressing. Serve with tortilla chips.
Enjoy leftovers for lunch the next day! YUMM
