Ham and Cheese Frittata- TopNotchMom Guest Post

Today I will be sharing my Ham & Cheese Frittata with all of you. I haven't seasoned my cast iron skillet yet so in the photo below you'll see I used an oven safe pot which was just the right height and worked perfectly. This frittata is also a perfect “breakfast for dinner” meal. Feel free to add or replace any of the vegetables, meat, or cheese and you can easily have your own custom frittata in no time.

  • 1 TBS oil
  • 1/2 C onion - chopped
  • 1/2 C green pepper - chopped
  • 2 cloves garlic - minced
  • 4 potatoes - cubed and cooked (I like my potatoes on the softer side so I boiled them for about 10 minutes)
  • 3/4 C cooked ham - cubed
  • 8 eggs - beaten
  • Salt & Pepper to taste
  • 3/4 C shredded cheddar cheese
  1. Heat oil in a large oven safe skillet over medium heat
  2. Add onion and green pepper; cook until tender
  3. Add garlic, cook one more minute
  4. Stir in potatoes and ham, cook until heated through
  5. Reduce heat to medium-low; add eggs, salt and pepper
  6. Cook 5 minutes or until eggs are firm on the bottom
  7. Top eggs with cheese; bake at 350 degrees for 10 minutes
  8. Cut into wedges and serve
