Easy Cheesy Meatball Subs

This week I am in South Carolina! Yippee!! Other than Miami when I was young, and the Washington DC airport for a layover, I've never been to the East Coast!

For now I leave you with one of my favorite quick-easy-n-healthy dinners, the Easy Cheesy Meatball Sub!


These babies are made with lean ground beef, an egg, some whole wheat bread crumbs, seasonings of your choice and a bit of cheese in the middle. They're high in protein and low in fat, plus they bake in about 15 minutes! Can't beat that! They're great by themselves, with marinara sauce, on a bun, or all of the above!


Tip: I like to bake the cheese right in the middle of my meatball so that when it cooks, the cheese just explodes out. It's very artistic looking. And delicious.

Easy Cheesy Meatball Subs
makes aprx 12 meatballs- 4 servings

1 lb lean ground beef
1 egg
1/4 cup whole wheat bread crumbs
1-2 tbs of garlic, depending on your taste
1 tbs onion powder
12 chunks of mozzarella cheese

You'll also need:
Marinara Sauce- I used store bought and heated it up
4 Submarine Rolls

Preheat oven to 350* and line a baking sheet with aluminum foil.
In a large bowl, mix together beef, egg, bread crumbs, and seasonings.
To form meatballs, take about a palm-full of the meat mixture and one chunk of mozzarella cheese (I like to cut string cheese into bite sized pieces). Form the meatball around the chunk of cheese and lay on the baking sheet.
When all meatballs are formed and arranged on the baking sheet, bake for about 15mins. Meatballs are done when the meat is brown and you see cheese oozing out- yumm.

These meatballs were gobbled up so quickly that I barely got a picture of the insides!
