Peppermint Chocolate Chip Cookies- a cookie swap recipe

I entered my first Christmas Cookie Swap this year and Ms. Aubrey from Real Housemoms was my partner! She sent me the cutest little recipe card with a scrumptious recipe printed on it and I am so glad to share it with you!

Peppermint Chocolate Chip Cookies
from RealHousemoms

2 & 1/4 cup flour
1 tsp salt
1 tsp baking soda
3/4 cup granulated sugar
3/4 cup brown sugar
2 sticks butter- room temp
1 tsp vanilla ext
1 tsp peppermint ext
2 eggs- room temp
1 cup crushed peppermint pieces
2 cups chocolate chips

Preheat oven to 375*
In a small bowl, combine flour, baking soda, and salt. Beat butter, sugar, brown sugar, vanilla and peppermint extracts in a large mixing bowl.
Add eggs, 1 at a time. Slowly mix in flour mixture.
Stir in chocolate chips and peppermint.
Refrigerate for an hour.
Drop rounded spoonfuls onto lined baking sheets.

Bake for 9-11mins, until golden brown. Peppermint will run, so use a spatula to push back into cookie while still hot on pan. Cool on baking sheets for 2 mins; remove from wire racks to cool completely.
