Spicy Veggie Soup w/turkey pepperoni


Hey cold front, thanks for being all cold...and windy... and drying out my hair and skin. It's cool, I actually think that looking like a grape that's stuck her hand in a light socket is a good look for me.

.... psyche...

So while I go deep condition my hair and bathe in Gold Bond lotion, here's a spicy soup recipe to keep you warm... enjoy!


Spicy Veggie Soup w/turkey pepperoni
inspired by this little gem

5 cups chipotle chicken broth
1 bag "soup veggies"- in the frozen veggies aisle
1- 15oz can diced tomatoes (I used garlic flavored)
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 medium white onion- diced
2-3 tbs diced garlic
2 tbs evoo (extra virgin olive oil)
3/4 roughly chopped turkey pepperoni

In a large pot, heat evoo on medium heat then toss in the carrots, celery, and onion to sweat. After about 5 mins, toss in garlic and stir. *If you like your veggies less crunchy, let 'em sweat longer*
Pour entire can of diced tomatoes in, stirring until warmed through.
Add in chicken broth and bag of soup veggies. Turn heat up to medium/high and bring to a boil.
Toss in turkey pepperoni and let simmer for about 5 mins.

Serve with parmesan pita chips.

My H-E-B carries Chipotle Chicken Broth... it's a staple at my house. If your grocery store carries no such thing, use regular chicken broth and spice it up with some red pepper flakes or use chipotle diced tomatoes!
