Pumpkin Oatmeal Cookies with Dried Cranberries

Tired of Pumpkin yet??

I took a bag of these cookies to work with me and set them on the table in the teachers lounge.
They were gone in 30 seconds flat- I swear.
I had many many compliments soon after. I even had an email from our secretary that read: "These were the best cookies ever! I must have the recipe!"


What I love about these cookies is that they were born from one of those secret family recipes that grandma perfected long ago- trust me, grandma knows what's up! I made the original recipe first (sorry, not sharing that one, it's still top secret!) and holy moly, were they tast-y!

So, you know these cookie.... they're pretty dang delicious....


Pumpkin Oatmeal Cookies with Dried Cranberries

2/3 + 1 tbs shortening (or unsalted butter)
1 can pumpkin (15oz)
1 cup brown sugar
1 cup white sugar
2 tbs water
1 egg
1 tsp vanilla

1 cup flour
1 tsp salt
1 tsp baking soda
½ tsp cinnamon
½ tsp pumpkin pie spice
1 cup dried cranberries
3 cups oatmeal

Heat oven to 325*. Cream together shortening, brown and white sugars, and egg. Add in water, vanilla and pumpkin and mix well.
Toss together flour, salt, soda, cinnamon, and pumpkin pie spice. Throw in cranberries and toss to coat. Combine oatmeal with the rest of the dry mixture.
Pour dry into wet- a little at a time until well mixed. You may have to use your hands, it gets a little thick.
Chill for 20mins-2hrs. This is important, do not skip this step!

drop spoonfuls onto a lined baking sheet. Press down a bit-they wont really rise or spread on the sheet while baking.

Bake for 12-15mins - mine baked for 12. Let rest on the cookie sheet for a few mins before transferring to a wire cooling rack.
