So, I thought it was time for a savory post. Too many sweets around here lately and I have a date with the beach in 3 weeks. SO, once again it's ciao to the carbo's and hello gorgeous to the lean proteins and veggies!
I've been on a serious coconut kick for, oh, almost a year now. It's been one of my healthiest serious relationships to date (buh duh ppsshh) and I am now the proud owner of a brand spanking new jar of Coconut Oil! I know, a little late on this band wagon, but it's now available in regular people grocery stores here.
btw: have you read the 52 uses for Coconut Oil?
This recipe was not complicated, or ingenious to be honest, but it is friggin tasty. And seriously good for you. Was the perfect dinner after bootcamp on Monday night.

Lime Chicken with Fresh Salsa
I cooked for one- adjust measurements accordingly.

1 boneless skinless chicken breast
2-3 tbs lime juice
salt to taste
2 tsp coconut oil
1 medium tomato
1 medium onion
1 medium jalapeno- seeded. or not, some like it hot. heeeyyy
Marinate chicken in lime juice and salt- 10-15mins.
Heat coconut oil in skillet on medium heat. When melted and hot, cook the chicken until it's....well, cooked.
While chicken is cooking, chop the onion, tomato and jalapeno and combine in a bowl. Toss in some lime juice and salt if preferred.
When chicken is cooked through, plate and top with salsa.
Enjoy!
SO tasty. Now I just need a Pina Colada.
Ah a forthy pina colada with this :-) Chicken looks yum...though I use coconut a lot in cooking, mostly fresh ones, I am still a coconut oil virgin....gotta try it...how do you like the smell of it?
