Raspberry Hot Cocoa Cookies


My birthday was Thursday (yay!).
It was a really beautiful day- sunshiney, a warm-ish 58*, really lovely.
Friday was lovely too, still sunshiney and  a bit warmer than Thursday.
Saturday? F-ing cold. and windy.
Today? Even Flippin colder! Plus reports of snowflakes/flurries. WTF!? 

It's definitely Hot Cocoa weather. Except I'm still enjoying birthday treats. Hot Cocoa Cookies it is!

I had raspberry hot cocoa packets and raspberry soda pop base which is basically a kind of raspberry extract type thing. The red color of the base gives the cookies just a bit of a red-ish hue. Kind of like a red velvet cookie. ish.



I used some zero-calorie sweetener in place of the white sugar in this recipe because the hot cocoa packets already have some sugar in them. 

creamed butter, sugar, egg and soda pop base.



Add the marshmallows when there's about 3 mins left





Raspberry Hot Cocoa Cookies
adapted from Love from the Oven

1 stick + 2tbs room temp butter
1/2 cup sugar/sugar substitute
1/3 cup brown sugar
1 egg
1/2 tsp raspberry soda pop base (or some kind of extract)
1 1/2 cups + 2tbs flour
2 packages hot cocoa mix
1/2 tsp salt
1/2 + 1/8 tsp baking soda
1/2 tsp baking powder
Large marshmallows cut in half

Cream together butter and sugar- add the egg and soda pop base/extract & combine.
Combine all dry ingredients.
Add wet ingredients to dry and combine. Batter will be pretty thick, use clean greased hands to incorporate if needed.
Drop spoonfuls on a lined baking sheet.
Bake at 350* for 8-11mins. Top with marshmallow halves when there's about 3-5mins left on the timer. be quick about this and please don't burn yourself! You can also add the marshmallows on top when you remove them from the oven, they just won't get brown and toasty on top.

*I halved the original recipe, that's why there's some funky measurements in there*
