Baked Potato Soup


Do you know what bacon, onion, and garlic smell like together.
Heaven, friend. Heaven?


I don't even think I need to go into detail about the rest of this soup now that you know how it begins.
It's going to rock your world. Obvs.


Plus you get to use an immersion blender. Which is kind of like a power tool.
Weeeeeeeeee!
If you don't have one, get one.

Baked Potato Soup
adapted from this recipe

3 bacon strips diced
1 small onion chopped
cloves of garlic- as much as you prefer
5-ish yellow potatoes washed and cubed
3 cups reduced sodium chicken broth
1 cup 1%milk

Toppings
green onion, chopped
shredded cheese
hot sauce
bacon bits

Cook bacon until crispy. Throw in the garlic and onions and saute in the bacon grease. Bring cubed potatoes to a boil in chicken broth. Once potatoes are cooked, add in the bacon, onion, garlic mixture. Turn off heat, add in milk. Blend until smooth. If you want thicker soup add in about a 1/2 cup dehydrated potato flakes.
Stir in hot sauce, top with cheese, onions, and bacon bits.

    Love bacon and bacon with potatoes, garlic and onion...you can't better than that :-) Whenever I make soup I always tend to add bacon just to perk up the soup, you know. But then I feel guilty, so I start to trim off all the fat and that my husband does not like...
