Pink Pomegranate Juice Bars- Guest Post

Hi everyone.  I am delighted to be posting here on Susan’s blog.  I am Grandma Loy, and I blog over at From Grandma Loy’s Kitchen.  I post easy, comfort-food recipes with lots of sweet things in the mix.  I would love it if you stop by and say, “Hi.”

Today I am sharing Pink Pomegranate Juice Bars.  This is a quick and easy recipe that uses pomegranate juice as an ingredient in both the bars and the glaze.  The result is a pretty pink bar cookie that is nice to serve at teas and showers.  I use both straight pomegranate juice and pomegranate juice combined with other juices in this recipe.  It depends upon what I happen to have on hand.


Pink Pomegranate Juice Bars
1 c. sugar
1 c. vegetable oil
1 c. pomegranate juice
4 eggs, at room temperature
2 c. flour
1 t. salt
1 T. baking powder
2/3 c. chopped walnuts or other nuts (optional)
1/2 c. butter, melted
2 c. sifted confectioner’s sugar
1 t. vanilla
2-4 T. pomegranate juice

In a large mixing bowl, combine sugar, oil, and pomegranate juice, mixing well.  Beat eggs and add to sugar mixture.  Combine flour, salt and baking powder, stirring well.  Add to liquid mixture, mixing until well combined.  Stir in chopped nuts if using.  Turn mixture into a greased 9x13-in. baking pan.  Bake at 350 degrees for 20 to 25 minutes.  Remove from oven and let cool.  In a small mixing bowl combine butter, confectioner’s sugar and vanilla.  Stir until well mixed.  Add enough pomegranate juice to make a glaze consistency.  Spread glaze over the cooled pan.  Let glaze set and cut into bars.  Makes about 36 bars.
